Madras Sauce Kit
My Madras Sauce Kit originates from the city of Chennai in South India, and contains a Fiery and Vibrant base sauce with mustard seeds, curry leaf and coconut, along with a separate sachet with a blend of whole spices (Mustard Seeds, Whole Red Chilli, Cumin Seeds, Bay Leaf and Green Cardamom Pods). The whole spices are given a “Tadka” (or tempering is a key technique in Indian cooking, infusing oil with the essence and aroma of whole spices to give the dish a burst of intense flavour). The sizzling sound of the spices cooking conjures up fond memories of my own mother’s kitchen. You can enjoy cooking this classic dish in 3 ways: Curry, Stir Fry and Bake.
